Thai Sweet Potato & Lentil Soup

This soup was made by Julie at one of our girls night dinners – I generally dont like mixing Western food with Asian flavours however I have changed my mind as this soup is just yum!

Ingredients:

1 med brown onion, finely chopped
3cm piece of fresh ginger, peeled & finely grated
1 tbsb Thai red curry paste
750 g sweet potato, peeled & diced
3/4 cup red lentils, rinsed
3 cups salt reduced vegetable stock
1 tbsp lime juice
1 tbsp fish sauce
2 tsps brown sugar
fresh coriander leaves, to serve
Method:

Gently saute onion in oil until softened. Add ginger & curry paste. Cook, stirring for 1 min or until fragrant
2. Add sweet potato, lentils, stock & 2 cups of cold water. Bring to boil. Reduce heat to low. Simmer partially
covered for 15-20 mins, or until potato & lentils are soft.
Set aside for 5 mins to cool
Process till smooth
3. Return to pan over low heat. Add lime juice, fish sauce, & sugar. Cook, stirring for 5 mins or until heated through.
Garnish with coriander & serve
