Swiss Chicken


6 chicken breasts
a little plain flour, seasoned
1 tblspn oil
90gm butter
6 slices ham
6 slices Gruyere or Jarlsberg cheese
1/4 cup chicken stock
6 medium sized mushrooms, cut in thin slices
salt and pepper
squeeze lemon juice

Pour a thin layer of chicken stock into a base of an ovenproof dish.Place chicken in this. Bake in oven about 10-12 minutes or until chicken is
heated through and the cheese is melted Don’t overcook or the cheese will melt away.


Preheat oven to 180-190°C
Remove bones from the chicken breasts. Skin and flatten gently. Dip in the seasoned flour
Heat oil and 60gm butter in a large pan and when foaming cook the chicken for 2-3 mins on both sides over a medium heat.
Remove when cooked through and top each breast with slice of ham, trimmed to a circle to cover chicken. Melt the remaining butter and cook
the mushrooms until softened with salt and pepper and squeeze lemon juice.
Spread a little of this on each chicken breast and finally top with the cheese.
