Home Made Sausage Rolls

I have to give tribute to my friend Shani for the inspiration to even try making  my own sausage rolls – she made it look oh so simple and with young kids around in those days – these were always a big hit.  They were as  simple as buying sausage meat and squeezing it onto the pastry, folding up, cutting then baking.

I was watching Justines show Everyday Gourmet and saw her making sausage rolls which included some spicy sambal oelek which inspired me to try them.

2 sheets frozen puff pastry, thawed
300g lamb mince
3 Italian sausages, skin removed
1 tbs sambal oelek
1 tbs tomato paste
2 tbs parsley, finely chopped
2 eggs, 1 lightly beaten
1 carrot, grated
1 small onion, finely chopped
Pinch of salt and freshly cracked pepper
Sesame seeds and/or poppy seeds

Pre heat the oven to 200C. Lightly grease  a large baking tray.

In a large bowl mix lamb mince, sausages,  tomato paste, sambal oelek, onion, grated carrot, parsley and egg. Season well with salt and pepper. With your hands thoroughly combine the meat mixture.

Cut pastry sheet in half. Place one quarter of the mixture along the length of the pastry pressing together tightly. Roll the sausage roll log until the meat is completely covered with ½ of pastry.

Cut into 4 pieces and place on the baking tray. Repeat the process with the remaining ingredients.

Brush some lightly beaten egg over the mini sausage rolls and cook in the oven for 20 minutes or until the pastry is golden brown.

Serve with your favourite tomato chutney or sauce.

*** The other alternative to is to use 3-4 premium sausages of your choice – just take the casing off and also you can add grated zucchini for extra hidden veggies
