Lemonade Scones

Who can deny that they dont like scones straight from the oven smothered in cream and jam and accompanied by a great cup of tea. I love these scones with lemonade and cream – so easy to make and taste delicious


1 cup lemonade
1 cup cream
3 cups of self-raising flour


Preheat oven to very hot 220C.

Sift flour. Add lemonade and cream to flour mix. Mix with pastry cutter or flat bladed knife to form soft dough, adding more milk if necessary. Place mixture on floured surface. This is a soft wet mix.

Bring together to a 2 cm thickness and cut with a floured cutter.
Use a 51/2cm round scone cutter to cut as many scones from dough as possible. Cut more scones and repeat to get 20 scones. try to cut as many scones as possible from the first lot of dough and when rolling out the dough again make it slightly thicker as they dont rise as well. Place scones close together on a baking tray, brush with milk


Bake 12-15 minutes until golden and well risen. Serve hot with jam and clotted cream.
