Greek Yoghurt Cake

My aunt introduced me to this cake and I have to say I am completely taken by it – not only for the simplicity of the cake but the ability to vary the ingredients and make lots of different types of cakes with this base recipe


1 cup full-fat yogurt
1 cup oil
2 cups sugar
3 eggs
3 cups self raising flour
1 teaspoon baking powder


Heat the oven to 180°C. Grease a 22cm springform pan lightly with baking spray or oil, and line the bottom with parchment.

Whisk together the sugar and eggs then add yogurt, olive oil. Add the flour, baking powder  into the liquids and stir just until no lumps remain.

Pour the batter into the cake pan and bake for 50 to 60 minutes or until skewer comes out clean when tested

Transfer the cake to a cooling rack and let it cool before removing it from the pan.
