Baked Meatballs

250 gms lamb mince

2/3 cup fresh breadcrumbs

1 egg, beaten

2 onions

1/2 cup chopped mint

2 large potatoes, cut into wedges

2 zucchini, cut into batons

12 cherry tomatoes

2 tbsp olive oil

60gm fetta,crumbled


Preheat oven to 200 C or 180 C fan forced

Grease a large baking dish

Place mince, breadcrumbs and egg in a large bowl

Grate 1/2  of 1 onion and add to mince with 2 tbnspn mint. Season with S&P

Using hands shape into 8 balls and place in prepared baking dish

Cut remaining onion into wedges and scatter around the meatballs with the potato, zucchini and tomatoes. drizzle oil over and season.

Bake for 35-40 mins, turning occasionally until meatballs are cooked through and vegetables are tender. Scatter with fetta and remaining mint and serve
