White Chocolate PannaCotta

Inspired by Poh – recipe adapted from Donna Hay- I keep coming back to this dessert because it is so deliciously simple.

  • 3 teaspoons powdered gelatine
  • ¼ cup (60ml) milk
  • 500ml thickened cream
  • 500ml milk
  • ½ cup (110g) caster (superfine) sugar
  • 1 tspn vanilla paste
  • 100g white chocolate, chopped
  • 1/4 cup of milk, extra


Put the gelatine in a small bowl and add the 1/4 cup milk. Stir and set aside for 2-3 minutes. Bring the milk, sugar, vanilla paste and cream to the boil over medium heat. Add the white chocolate and stir till melted.

Add the gelatine mixture and whisk until smooth. Strain the mixture and pour into moulds of choice.

Leave in refrigerator to set for about 4-6 hours or overnight.

Serve with poached pears.


To make the poached pears – peel and halve 4 beurre bosc pears – place in a slow cooker and add 1/2 cup castor sugar and 1/2 cup dessert wine  as well as 1 tspn vanilla paste. Allow to cook away until you need them. (You can put in the oven)

I cooked this yesterday to take to a friends for dinner and as I was working night shift I had to get some sleep, so I prepared the panna cotta – put in the refrigerator to set and left the pears to poach in the slow cooker

– effortless and a huge hit!!
