Soula made these the other day and brought them into work – they were quite delicious.

Greek Easter biscuits

Here is the recipe

Ingredients

4 eggs

1 cup olive oil

1 cup milk

1 cup sugar

1/4 tspn baking powder

1/2 tspn vanilla extract

self raisng flour

Method

Beat 2 of the eggs plus the  eggwhites of the other two eggs (keeping 2 of the egg yolks for glazing)

Add sugar and beat with electric hand beater

Add oil

Heat milk and stir in the baking powder and vanilla

Add this to the mixture with all the other ingredients.

Add enough sifted SR flour little by little Mix by hand

to get the consistency of a pliable dough.

Cut off little bits of dough and shape into plaits or swirls

Put on baking tray – glaze with egg yolk and bake in  oven till golden
