Cabbage Rolls with Lemon Sauce

I have always hated cabbage rolls however whenever my mother makes these I cannot resist. I have learned to appreciate the delicate flavours and light texture of this dish. I have never tried to make these however here is my mothers recipe as best I could recreate

You need

500gm ground beef
1 1/2 kg cabbage
1 onion, grated
1/2 cup rice
parsley, finely chopped
3 tspns salt and pepper to taste (my mums cooking always tastes great to me , I think its because she adds a lot of salt and I
don’t use any)
2 tomatoes peeled and finely chopped
1 green capsicum finely chopped
3 cups hot water or beef/chicken stock
2 tblspns flour
2 tblspns butter
3 egg yolks
1 lemon

Remove the outer leaves of the cabbage and put into boiling water. . Cover and boil for 5 minutes until softened.
Prepare the cabbage leaves and cut each into half.
Mix together the beef, rice, onion, pepper, tomato, parsley ,half the salt and pepper .
Spoon large tblspn of this mixture into each cabbage leaf and wrap.

Arrange the cabbage rolls in a pan. Top with butter and add remaining salt. (Boy does my my mum use a lotta butter…cringe with guilt these days)
Cover with an old plate. Add water or stock then cover the pan with a lid and simmer gently for about half an hour.

Remove the cabbage rolls and arrange on a serving platter. measure the juices in the pan and make it up 2 cups using water if necessary.

In a small saucepan (bain marie) put flour and butter and egg yolks. Beat well and then slowly add the hot juices from the cabbage rolls. Use a wire whisk and whisk till slightly thickened. Add lemon juice, stir then pour this egg/lemon mixture over the cabbage rolls

Little tips

*use half beef/half pork mince for better flavour
*tomatoes may be omitted or substituted with tomato paste
*may saute the onion and pepper first before adding the rice etc
*cayenne pepper or paprika can be added in stuffing mix
*may be cooked in the oven in an earthenwear casserole dish with a lid for approx 1-11/2 hours
