Zucchini Fritters

An abundance of zucchini from my mums garden and what to do with it before it goes off. I usually make my zucchini and bacon cake but today is just too hot to turn on the oven so I found this recipe from taste.com.au and used it as a guide to make zucchini fritters.

I grated up my zucchini – it was a rather large one – you must squeeze out all the moisture – (I added these juices to my spag bol sauce whilst it was simmering away – so didn’t waste it). Salt it to taste. Crumble in some feta cheese – not too much and 2-3 sliced spring onions .

I then and added flour to get a dryish mixture. Add an egg and mix. Add some parsley or coriander chopped up if you have it. I squeezed in a little coriander paste as I didnt have fresh parsley. The mixture will be quite wet still.fried zucchini

Heat up oil in a frying pan and drop in spoonfuls of mixture into the hot oil. Don’t touch until the base of the fritter has cooked then you can move it around the pan to make room for more. Brown and flip over to cook the other side.

Serve with feta cheese and greek salad
